Olives are too bitter to be eaten right off the tree and must be cured to reduce their intrinsic bitterness.
This curing process is called fermentation and all olives must go through it in order to be edible.
This process can have an important impact on the taste and texture of the fruit.
In Bio Olives we are using the completely natural fermentation method, with zero use of chemicals. This way, the fruit is still in its most healthy form, making it easier for our bodies to digest, while at the same time enhancing the nutritional value of the product.
